I run mine at the standard 44 on street. In the sand dunes I bump it down to about 15. I haven't thrown a bead yet, but if I were dealing with higher speeds I probably wouldn't go quite that low.

So, you take your tires maximum PSI, and it's maximum load. Then you take your trucks weight. Then you do some math. That should get you an approximate value to set them at.

Or you can do a chalk test.

Either way works.
