To get a good fitment you want adapters to be hub centric to the truck and then hub centric to the wheel. If it is only hub centric to the truck & not the wheel you run a good chance of getting vibration at high speeds. I have never liked wheel adapters but if had to do it definitely hub...
The offset you have now is a +14 you should have +20 offset which would work no problem with 325/60-20 tire. I am surprised it rubs that bad now. The lower the offset the more it cuts down your turning radius.
I went with the 20x9 Fuel Octane matte black and the Nitto Terra Grappler 325/60-20. I really like the Nitto Trail Grappler it looks bad ass but I do more highway then offroad.
No rubbing at all with the right offset. I am doing a 20x9 +20 offset which will bring the wheel right to the edge of the fenders but not sticking out. The lower the offset the more the wheel will come out from the truck. I agree with you about taking the truck through trails too nice to get it...
Go with the 20" you won't notice a ride change and 18" I don't think you would notice much of a difference than the 17" IMO. You can put a 325/60-20 or 35x12.50-20 tire on your truck which will still have a lot of sidewall. I ordered some 20" for my truck just waiting for them.

The Dune Grappler is a good tire quiet on the road but the Terra Grappler is a better all around highway, rain, ride comfort and will be good in the sand. Dune Grappler does have a wild lookin tread design!
That is not true at all and some new vehicles come with multi-pc wheels mostly the high end cars. Here something new Fuel wheels been working on 2-pc custom build truck wheels available for 2012.
The 20x12 size is the deep lip series from Fuel wheels those are for trucks with a serious lift. You can get the octane or hostage 20x9 +14 (more aggressive fitment) or +20 offset with Nitto 35x12.50-20 trail grapplers would look real nice. Do the 20" IMO
