More or less pressure in the bumpstops won't "upset" anything

It certainly will if you're working with little up travel and an abrupt transition to the bumps, it'll donkey kick just like you've got no bumps at all.
As you explained yourself lowering the pressure makes the transition more seamless.

The Fox 2.5 bumps are initially set at 200 psi

That is correct @ntm. Landon at Ready Lift said to adjust the pressure, not below 100 psi, to get the results that we are comfortable with. This will slow down the initial bump and allow it to transition into a stiffer bump as it progresses upwards.

He did say that we could shim the bump as well, but that it would need a higher pressure to be effective.
