I did some minor trimming and I’m getting the tires and wheels put on this Friday so I hope I trimmed enough.

im not sure how much work you're willing to do to fit the tires but jwpres posted a thread a few below this one about the modification he did to ensure no rubbing under any circumstance, and his modification looked extremely clean. If I was going to run 37's that's what I would attempt to reproduce

I have been running Geisers up front and Deaver +3s in the back for more than a year. I have 17x8.5" Fuel wheels with a +6mm offset and 37" Toyo RTs, which run pretty close to a true 37. To avoid rubbing with everyday spirited driving, I had to trim a small 3"x4" piece of the inner plastic fender well. You can see what I did on page 7 of my build thread. It took me less than 30 minutes to remove the wheels, cut and paint the area behind the plastic, and you can hardly tell it is there.

If you plan to jump your truck and take it to full compression, you will need to add +2 fenders and bedsides to clear 37s at almost any offset. The excellent job jwpres did with his 37s was a LOT of work, but it will work out well for him. Otherwise, you will be fine with minor plastic trimming as long as you stick with 8.5" wide wheels that have more than +0mm of offset.

I know it is working for Jeff, but I would avoid spacers as they cause additional stress.

What tires?

I would be mentally prepared to use the cutoff wheel for removing pinch welds if you went zero offset and a large 37" tire (nitto, toyo, etc). A smaller 37 will be more forgiving (BFG). That, or just plan on minimized suspension travel and turn radius.

Got the 37s put on today with the 0 offset wheels. Didn’t have to trim much. Cut back some of the pinch weld to the rivets and the plastic liner and also heated up the plastic liner and rolled it inside the fender next to the pinch weld. No rubbing.
