I looked at the spreadsheet again and found something that looked promising but don't want to brick the truck or double the volume by accident lol

Just back up your original file and your good to go, I was hex editing this stuff with Ford IDS before Forscan, now that was a challenge, there are no guides or byte maps going that route, and I never bricked anything. You'll be fine, go big or go home...
