My question is if I were to put 35's with 17 inch rims do I need to adjust my perch to thee middle or top from stock?

35's on 17'sn is what comes stock so you won't have to change anything. You're good to go.

Very few 35's actually measure out to a full 35" tall. Especially when mounted and installed on the truck.

FYI, I've seen 35 Grabbers eat the fender liner in the front when off road. YMMV.

IMO if your going to run it Offroad, go mid perch. Even if the tires are being left stock. will just work so much better.
From everything I've read on here from members, and videos I've seen on YouTube, it's the way to go.

Yeah I noticed my tires weren't true 35s, and I wanted grabbers so I'm guessing a perch adjustment is necessary?

Probably not necessary, the stockers are like 34.4 in. So your tires are only gonna be about 1/4 in closer to your fenders. However I would go mid perch anyways just for the gain in ride comfort.
