I was just on you profile page, I see it's the Shelby with the Whipple.

Have you unplugged the TB wire connection and checked it?
I'm not sure if it's an extension harness but follow it back to the PCM and check any other connections.

Could be a malfunctioning TPS in the throttle body. Those sensors are cheap.

Thanks....gonna check that out...but cheap..?? I'm seeing around $400-$450 range....of course thats way cheaper than slamming into someones read end..lolololol....but hate to go thru the expense it its not needed...Is there a way to actually check the Throttle Body...to see if bad....? Could bring to Stealership, but hate dealing with them...cause of course it will be a $1000 bill to install a new one, even f I dont need..! :-(
What about trying a good Throttle Body Cleaner..first..??

Parking is the only issue, if I get stuck not being able to park on a job site.

I've never cleaned my TB, only the MAF sensor.
But I don't go through mud holes or pond pounding either.

I keep changing (cleaned and oiled up) the S & B air filter about every three to four months.

I'm betting it's an electrical issue somewhere, a bad TB would cause surging and/or improper throttle response.
Not all of a sudden start opening up to full throttle.

Yours may look slightly different but the connection to the TB is here.

Had a similar thing hpen. Driving up to stop sign started to brake and truck started to accelerate forward. Threw truck into neutral and it reved up to 5 grand. I had a set of boots on and when I went to btake my foot was on the edge of the brake and and on the edge of the gas pedal at the same time. The harder I pushed on the brake the further the gas pedal went down. Only happened once but it sure wakes you up.
