All I am taking the Raptor Assault course in October. Any suggestions for the course? My wife and I start the trip on September 27th until October 5th. Driving school is on Oct 3rd. My wife and I would like to do some hiking in Zion and Bryce Canyon any good suggestions for visiting while we are there? Places to stay?

I would stay in Park City, a lot more to do there than SLC or Tooele and it's not terribly far.

Consider this. From Escalante UT take Posey Lake Road. Drive a ways on Posey Lake Road. From there take Hell’s Backbone Road down to Boulder UT. Eat at Hell’s Backbone Grill in Boulder. This route is not paved, so it’ll take some time. If you can fit this in you will thank me.

You could spend days exploring the forest roads in this area.

If you don’t have the time to take Posey Lake Road, driving highway 12 from Escalante to Boulder is also incredibly scenic. This route is paved, meaning that it’ll take you less time.

In SLC eat at Red Iguana if you like Mexican. I recommend the mole. SLC has lots of fine dining as well if you want to go that way.

Enjoy your adventure!

This, especially if you are taking your wife. We stayed at the Waldorf there at this time a year ago, which is really not that expensive this time of year and the rooms are like mini condos. I would definitely recommend brunch at Stein Erikson Lodge if you are there for one and the weather is nice.
